<p>この日はお子様の冬休みシーズンで家にいるので翌日のご飯を作り置き。<br>子供から大人までみんな大好き照り焼きチキンです。</p>

<p>①計量カップに【A】を混ぜ合わせ照り焼きソースを作っておく<br>②鶏もも肉に塩・コショウと振りかけ片栗粉を両面にまぶす<br>③ゴマ油をひいたフライパンが温まったら鶏もも肉を皮目から強めの中火で焼く<br>④焼き目がついたらひっくり返して余分な油はキッチンペーパーでふき取る<br>⑤作っておいた照り焼きソース【A】を入れて煮詰めたら完成！</p>



<p>この照り焼きチキンのポイントはソースに使われているアプリコットジャム。</p>



<p>酸味と甘みのバランスが絶妙で入れても味を主張せず<br>味にコクと照りをつけてくれるんだそうです。</p>



<p>そのまま食べるのはもちろんですが<br>ご飯に乗せて「照り焼き丼」にするなど使いまわしも利きます。</p>

<p>①ボウルに【A】を入れ耳たぶくらいの硬さまで練る<br>②細かくちぎり5㎝ほどの棒状に伸ばしラップをかけ20分寝かせる<br>③豚バラ肉・野菜・しいたけを食べやすい大きさに切る<br>④圧力鍋に切った具材と【B】を入れ10~15分煮込む<br>⑤土鍋などに具材を移し中火にかける<br>⑥寝かせておいた生地を伸ばしながら鍋に入れて15分ほど煮る<br>⑦煮あがったらゆず味噌を溶かしたら完成！</p>

<p>再び登場の筑前煮。<br>和田さんは年末になると筑前煮を作り置きするのだそうです。</p>

<p>①クリームチーズをサイコロ状に切っておく<br>②春巻きの皮の上に黒豆とクリームチーズを交互にのせる<br>③水で溶いた小麦を塗って巻いていく<br>④フライパンにサラダ油を深さ1㎝ほど入れ弱火で焼き色がつくまで揚げたら完成！</p>

<p>①みかんを皮ごと2cmの幅に切る<br>②切ったミカンと砂糖・お酢を入れ40℃で6時間おけば完成！</p>



<p>酸味がフルーツによって緩和され口当たりが良くなるのだそうです。<br>みかんの他にもお好みのフルーツで作れます。</p>



<p>ヨーグルトメーカーがなければ密閉できる容器に材料を入れて<br>そのまま1週間ほど常温発酵させることでもつくれます。</p>

<p>まずは茹で方から。</p>



<p>指定通りの時間茹でたら氷水ではなく常温の水で洗う。<br>そうすると硬くなりすぎず風味＆甘みが逃げないとのことです</p>



<p>お次はそばつゆです。<br>ここにも池森さんのこだわりがあります。</p>



<p class="is-style-blank-box-navy"><strong><span class="fz-20px">材料</span></strong><br>●つゆの素（3倍濃縮）　  大さじ2と小さじ1<br>●水　　　　　　　　　　120ml<br>●かつお節　　　　　　　2パック<br>●長ネギ　　　　　　　　1/2本<br>●黒コショウ　　　　　　適量<br>●えごま油　　　　　　　大さじ1　</p>



<p>①長ネギを輪切りにして水にさらしておく<br>②鍋につゆの素と水を入れて中火で沸騰するまで温める<br>③かつお節を袋から出しレンジ（500w）で1分30秒ほど加熱して砕いて細かく砕く<br>④おちょこに底が見えなくなるくらい黒コショウを入れる<br>⑤砕いたかつお節とさらしておいた長ネギを入れ②を注ぐ<br>⑥最後にえごま油を入れたら完成！</p>

<p>かつお節はレンジで加熱することにより水分がとんで<br>パリパリの魚粉に早変わり。</p>



<p>えごま油を入れるとつゆのコクやまろやかさがアップ。<br>大量に入っていた黒コショウも辛みが旨味に代わるのです。</p>
