<p>こちらは<br>人気料理研究家・ジョーさんが<br>教えてくれた「サーモンの2色丼」です。</p>



<p class="is-style-memo-box"><strong><span class="fz-20px">材料（2人分）<br></span></strong>・ご飯　　　　　　　　2人分<br>・卵黄　　　　　　　　2個<br><br>【サーモンの塩昆布漬け】<br>・サーモン（刺身用）　150g<br>・塩　　　　　　　　　ひとつまみ<br>・塩昆布　　　　　　　20g<br><br>【サーモンの塩こうじ漬け】<br>・サーモン（刺身用）　200g<br>・塩　　　　　　　　　ひとつまみ<br>・塩こうじ　　　　　　大さじ1と1/2<br>・みりん　　　　　　　小さじ2</p>



<p>2種類のサーモンを作りますが<br>まずは【サーモンの塩昆布漬け】から。</p>



<p>サーモンを小さめの一口大に切ったら<br>塩を振って5分ほど置く。</p>



<p>塩の作用でサーモンの臭みが抜けて<br>身が締まるのだそうです。</p>



<p>身から出てきた水気はキッチンペーパーで<br>しっかりと拭きとります。</p>



<p>保存袋にサーモン・塩昆布を入れたら<br>軽く揉みこんで冷蔵庫で20分ほど寝かせればOK<gwmw style="display:none;"></gwmw></p>



<p>お次に【サーモンの塩こうじ漬け】の作り方。</p>



<p>容器に塩こうじ・みりんを混ぜ合わせて<br>調味料を作っておきます。</p>



<p>同じく切ったサーモンに塩を振って<br>水気をしっかり取ります。</p>



<p>サーモンと調味料を合わせたら<br>保存袋に入れ冷蔵庫で<span class="bold-red">1晩</span>寝かせます。</p>

<p>こちらは<br>『日本橋ゆかり』<br>三代目・野永喜三夫さんが教えてくれた<br>寒い冬にピッタリな「鮭の味噌バター鍋」です。</p>



<p class="is-style-memo-box"><strong><span class="fz-20px">材料（2～4人分）</span></strong><span class="fz-20px"><br></span>・塩鮭　　　　3切れ<br>・じゃがいも　大1個<br>・にんじん　　1本<br>・玉ねぎ　　　1個<br>・春菊　　　　170g<br>・味噌　　　　60g<br>・白だし　　　90g<br>・牛乳　　　　300g<br>・水　　　　　600g<br>・バター　　　30g</p>



<p>塩鮭は3等分に<br>じゃがいも・にんじんは皮つきのまま<br>極薄切りにする。</p>



<p>玉ねぎは芯を取り極薄切りに<br>春菊は根元を切り落として半分に切ります</p>



<p>塩鮭の下処理から。</p>



<p>切った塩鮭を熱湯に3秒ほど入れたら<br>すぐに取り出し水で冷やしてキッチンペーパーで<br>水気を拭きとります。</p>



<p>こうすることで鮭の臭みが取れ<br>ウロコも取りやすくなるのだそうです。</p>



<p>火をつけるまえの鍋に<br>じゃがいも･人参･玉ねぎ･春菊の茎を入れ<br>塩鮭をのせます。<gwmw style="display: none; background-color: transparent;"></gwmw><gwmw style="display: none; background-color: transparent;"></gwmw></p>

<p>具材に合わせだしを加えたら<br>10分ほど中火にかけます。</p>

<p>白菜は葉の方は大きめの<br>芯に近い方は小さめのざく切りにします。</p>



<p>しょうがは皮をむいて2cm程度の細切りに。<gwmw style="display:none;"></gwmw></p>



<p>ボウルに白菜・しょうが・塩・砂糖を入れ<br>しっかり揉みんだら水気をしぼる。</p>



<p>余分な水分を抜くことで<br>シャキシャキ食感になるそうです。</p>



<p>サーモンは型崩れしないよう<br>大きめの角切りにします。</p>



<p>切ったサーモンに塩・コショウ・酒を振り<br>なじませてから片栗粉をまぶす。</p>



<p>酒を入れることで水分を補ってくれて<br>しっとりとした食感に。</p>



<p>ここで合わせ調味料を作ります。</p>



<p>ボウルに【A】を入れ混ぜ合わせたら<br>合わせ調味料のできあがり。</p>



<p>サラダ油を引いたフライパン<br>サーモンに焼き色がつくまで強めの中火で炒め<br>火が通ったら一度取り出します。</p>
