<p>まずはお気に入り麺つゆを使った<br>「ぶっかけそうめん」から。</p>



<p class="is-style-memo-box"><strong><span class="fz-20px">材料（1人前）</span></strong><br>・そうめん　　　　　　　1～2束<br>・豚バラ肉　　　　　　　120 g<br>・なす　　　　　　　　　1本<br>・生ワカメ　　　　　　　20 g<br>・麵つゆ（しいたけ味）　100 ml<br>・ごま油　　　　　　　　大さじ1<br>・万能ねぎ（小口切り）　お好みで　　　　　　　<gwmw style="display:none;"></gwmw></p>



<p>なすは縦半分に切り<br>斜めに隠し包丁を入れたら横に薄切りに。</p>



<p>ナスに隠し包丁を入れておくと<br>味が染み込みやすくなります。</p>



<p>豚バラ肉は5 cm くらいに<br>生ワカメは食べやすい大きさにカット。</p>



<p>ボウルに切ったワカメを入れたら<br>麺つゆを加えて浸しておきます。</p>



<p>ごま油をひいたフライパンで<br>豚バラ肉となすを炒め火が通ったら<br>ワカメ入の麺つゆに加える。</p>



<p>よく混ぜ合わせて粗熱をとったら<br>冷蔵庫で冷やしておきます。</p>



<p>茹でたそうめんを器に盛りつけ<br>冷やしておいた具入りの麺つゆをかける。</p>



<p>刻んだ万能ねぎを散らせば完成！</p>

<p>豚ヒレ肉は不要な部分を取り除き<br>大きめのぶつ切りに。<gwmw style="display:none;"></gwmw></p>



<p>ショウガとニンニクは薄切りにします。</p>



<p>オリーブオイルをひいたフライパンで<br>豚ヒレ肉を焼く。</p>



<p>別の小鍋に【A】と<br>ショウガ・ニンニクを加え煮立てます。</p>



<p>煮立ったら焼いた豚ヒレ肉と<br>しいたけを丸ごと入れ30分煮込む。</p>



<p>その間に北京ダックの生地を<br>せいろで蒸しておきます。</p>



<p>北京ダックの生地がなかったら<br>ライスペーパーでもOK</p>



<p>煮あがったら<br>豚ヒレ肉としいたけを取り出して薄切りに<br>小ネギとセロリは千切りにします。</p>



<p>残ったタレで春雨を煮込む。</p>



<p>それぞれ皿に盛りつけたら完成！</p>

<p>まずは「大山鶏の南蛮漬け」から。</p>

<p>鶏もも肉はそぎ切りに。</p>



<p>切った鶏もも肉と塩麹を<br>保存袋に入れて揉みこんだら冷蔵庫で10分。</p>



<p>鶏肉を塩麹で揉み込むと<br>しっとり柔らかい食感になります。</p>



<p>鶏もも肉を冷蔵庫で寝かせてる間にタレ作り。</p>



<p>ボウルに【A】と<br>細切りにしたにんじん・ピーマン・たまねぎを<br>混ぜ合わせたらレンジで3分加熱。</p>



<p>これで南蛮タレのできあがり。</p>



<p>鶏もも肉を取り出し片栗粉をまぶしたら<br>多めの油で揚げ焼きにする。</p>

<p>お次は<br>出汁の旨味で塩分8割カットの<br>「減塩おろしハンバーグ」です。</p>

<p>大根はすりおろして水気を切ったら<br>千切りにした大葉と混ぜておく。</p>



<p>ボウルに豚ひき肉・コショウを入れてこね<br>粘りが出てきたら玉ねぎ・パン粉を加え<br>よく混ぜ合わせる。</p>



<p>2等分にしたタネを<br>空気を抜きながら形を整えて<br>油をひいたフライパンで焼きます。</p>



<p>しっかりと両面に焼き目がついたら<br>水を加え蓋をして弱火で7分。</p>



<p>火を止めそのまま5～10分ほど置き<br>余熱で中まで火を通します。</p>



<p>焼きあがったハンバーグを器に盛り<br>大根おろしをのせる。</p>



<p>フライパンに残った肉汁に<br>【A】を入れとろみがつくまで煮詰めたら<br>ハンバーグにかけて完成！</p>

<p>ウィンナーは斜め切りに。</p>



<p>ピーマンは細切りにして<br>玉ねぎ・ニンニクは薄切りにしておきます。</p>



<p>オリーブオイルを入れたフライパンに<br>ニンニクを入れて香りが出てきたら<br>玉ねぎをしんなりするまで炒める。</p>



<p>そこへ半分に折ったパスタと<br>トマトピューレを加え炒めます。</p>



<p>さらに<br>トマトジュース・コンソメ・ウィンナーを<br>加えて弱火で10分加熱。</p>



<p>パスタが柔らかくなってきたら<br>ケチャップ・牛乳を加えて詰めていきます。</p>



<p>最後にピーマン・水を加えて<br>火が通ったら完成！</p>

<p>4時間かけたスープで作る<br>「じっくり煮込んだ家系スープカレー」です。</p>



<p class="is-style-memo-box"><strong><span class="fz-20px">材料（4人前）</span></strong><br>・豚骨　　　　　　1 kg<br>・鶏ガラ　　　　　800 g<br>・魚肉ソーセージ　2本<br>・にんじん　　　　40 g<br>・じゃがいも　　　1個<br>・カレールウ　　　1箱分<br>・ご飯　　　　　　お好み量<br>・油　　　　　　　適量<br><br>【A】<br>・ネギの青い部分　2本分<br>・玉ねぎ丸ごと　　1個<br>・にんじん丸ごと　1本<br>・ショウガ　　　　多めに<br>・ニンニク　　　　多めに<br>・水　　　　　　　具材全体が浸かるくらい</p>



<p>鍋に豚骨＆鶏ガラを入れて30分煮込んだら<br>取り出しハンマーで砕いて鍋に戻す。</p>



<p>【A】を加えて4～5時間中火で<br>アクを取りながら煮込んでいきます。</p>



<p>ざるでこしながら具材を取り出したら<br>カレールウを加えてとろみがつくまで煮込む。</p>



<p>にんじんは短冊切りに<br>魚肉ソーセージは斜め切りに<br>そしてじゃがいもは輪切りにします。</p>



<p>多めの油をひいたフライパンで<br>具材を揚げ焼きに。</p>



<p>器に盛ったご飯にカレールウをかけ<br>揚げ焼きにし具材をトッピングしたら完成！</p>
